L' Olive Bleue, Sherbrooke, Quebec, Canada

A French restaurant that has clearly been styled to have a clean and modern interior. It is situated in an old church along with a handful of art studios and a stage. It offers outdoor patio seating when the weather is hospitable.


Presentation:
Snazzy presentation with the medium height ramekin placed bare on a dinner plate with a whipped cream garnish that has roasted pecans placed gently on top. There is also a fork shadow which is made of dark chocolate powder.

Crust:
The crust is moderately thick. It has a sweet and traditional taste and no evidence of charring.

Custard:
The custard is deep and light. The texture is just two shades thicker than a heavy whipped cream and deliciously smooth. The temperature is cool to cold. There is a very gentle vanilla taste but overall there is no real strong taste other than cream.

Overall Impression:
If there were award for great presentation I think this would get it. It generally captures the fun atmosphere carried on in the restaurant. As for the actual dessert however, I can't say it's any thing really spectacular. It is very high quality and I think it is a traditional crème brûlée experience in every way when you eat it. The lack of any strong taste in general however takes away from it. The pleasant texture combination of both the crust and custard beg for a unique or defining taste partner, which is absent. In general, due to the high quality of the preparation and the delightful presentation I think it is better than most, but unfortunately the taste is the biggest shortcoming of the dessert.
