
Presentation:
Base is a black dinner plate with an assortment of berries next to the ramekin. A low oval ramekin is used. Garnished with a further assortment of berries including a few strawberries, raspberries, blackberries, and blueberries.
Crust:
The crust is delicate and sweet providing a nice complement to the desert. No evidence of charring present anywhere.
Custard:
There is a perfect balance of custard and vanilla taste to the base and clearly real vanilla beans were used evidenced by the bean particles on the bottom of the dish. The custard is served chilled. The density is ideal and the custard is perfectly smooth.
Overall Impression:
I genuinely enjoyed this crème brûlée. There were no risks taken and it is classic in every way. Despite the lack of creativity the overall quality is superb. I was encourage to keep taking bites, but was not inspired in any way.
